

Sincero Rizzi is the latest ‘craftsman of the Felino’, and our salame made with Casertana breed meat is dedicated to him. He has the task to choose the best casings, perfectly fattened and scraped one by one with a fork spoon. It is up to him to establish when the meat is ‘mature’ enough to be minced and when it is the right time to fill the salame.
It is his job to determine when the drying room and the seasoning rooms planned with Stefano Remedi are working and stopping. After 60 days at least, when the good moulds have invaded the salame and the ‘white feathering’ has appeared, the “black work” will have been completed.
